Tuna Pasta

The easiest high-protein dinner. Tuna stirred through pasta with cherry tomatoes, capers and olive oil.

Ingredients

  • 160 g pasta (penne or fusilli)
  • 2 cans tuna in olive oil, drained
  • 150 g cherry tomatoes, halved
  • 1 tbsp capers
  • 2 cloves garlic, sliced
  • Handful flat-leaf parsley, chopped
  • Olive oil, salt, black pepper

Method

  1. 1Cook pasta in salted boiling water until al dente. Reserve a cup of pasta water.
  2. 2Sauté garlic in olive oil 1 min. Add cherry tomatoes, cook 4 min.
  3. 3Add capers and tuna. Stir gently to warm through.
  4. 4Drain pasta and toss with the tuna sauce. Add a splash of pasta water if dry.
  5. 5Finish with parsley, black pepper and chilli flakes if using.
