Ingredients

  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, crushed
  • 150 g dried red lentils, rinsed
  • 1 tbsp tomato purée
  • 1 tsp ground cumin
  • 750 ml vegetable stock
  • Juice of ½ lemon
  • Small handful fresh mint, chopped
  • Salt and pepper, to taste

Method

  1. 1Sauté the onion and carrots in a little oil for 4 minutes until softened.
  2. 2Add the garlic and cumin and cook for 1 minute more.
  3. 3Stir in the tomato purée, lentils and stock. Bring to the boil.
  4. 4Simmer for 25 minutes, stirring occasionally, until the lentils are soft.
  5. 5Stir through the lemon juice and mint just before serving. Season to taste.
