
Red Lentil Soup
Warming red lentil soup with cumin, lemon and mint. Light and plant-based — make a big batch and store the rest.

Ingredients
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, crushed
- 150 g dried red lentils, rinsed
- 1 tbsp tomato purée
- 1 tsp ground cumin
- 750 ml vegetable stock
- Juice of ½ lemon
- Small handful fresh mint, chopped
- Salt and pepper, to taste
Method
- 1Sauté the onion and carrots in a little oil for 4 minutes until softened.
- 2Add the garlic and cumin and cook for 1 minute more.
- 3Stir in the tomato purée, lentils and stock. Bring to the boil.
- 4Simmer for 25 minutes, stirring occasionally, until the lentils are soft.
- 5Stir through the lemon juice and mint just before serving. Season to taste.
