
Grilled Chicken with Cauliflower Rice & Green Beans
Grilled chicken with a cauliflower and brown rice mix tossed in warming spices, and lemon-sesame green beans on the side. A lighter, high-protein dinner that still eats like a proper rice dish.

Ingredients
- 2 chicken breasts (~300 g)
- 1 tsp paprika, cumin, curry powder or Italian herbs (your choice)
- Olive oil, salt, pepper
- 1 pouch (250 g) microwavable brown rice — half a pack each (or cook rice from dry, following the pack instructions)
- 1 bag (300 g) frozen cauliflower rice
- 1 tsp olive or sesame oil, for the rice
- 200 g green beans (fresh or frozen)
- Juice of ½ lemon
- 1 tsp sesame seeds
Method
- 1Season the chicken with your chosen spice, salt and pepper. Grill in the oven, air fryer or a pan until cooked through.
- 2Microwave the brown rice pouch for 2 minutes, or as indicated on the pack (or cook rice from dry, following the pack instructions).
- 3Microwave the cauliflower rice for about 2 minutes, or as indicated on the pack.
- 4Heat the olive or sesame oil in a frying pan. Add both rices and your chosen spice, and toss together for a few minutes until well combined and hot through.
- 5Steam or microwave the green beans (fresh or frozen) until tender.
- 6Toss the green beans with a drizzle of olive oil, a squeeze of lemon and the sesame seeds.
- 7Serve the chicken with the rice mix and green beans.
