
Eggs Bagel
A folded egg-and-bagel breakfast sandwich with lean bacon and a thin line of sauce, cheese optional. High protein, ready in about 10 minutes.

Ingredients
- 2 whole eggs
- 2 egg whites
- 1 wholemeal bagel (or 2 slices of toast bread, or a sandwich thin)
- 1 rasher lean back bacon, grilled
- 1 slice tomato, grilled
- 2-3 slices pickled cucumber (optional)
- 1 tsp burger sauce, or your favourite sauce (optional)
- 1 thin slice cheese (cheddar, protein cheese or a melting cheese), optional — adds about 40 kcal
- Pinch of salt and pepper
- Oil spray, for the pan
Method
- 1Whisk the whole eggs and egg whites together with a pinch of salt and pepper.
- 2Heat a non-stick frying pan with a light spray of oil over medium heat. Pour in the egg mixture and cook gently, without stirring, until almost set on top.
- 3Split the bagel in half and lay both cut sides face-down directly on top of the egg in the pan.
- 4Once the bagel has picked up a little colour and the egg underneath is fully set, flip the whole pan contents over so the bagel is now on the bottom.
- 5Fold the egg over to fit inside the bagel, then transfer to a board and lift off the top half.
- 6Layer the bacon, grilled tomato and pickled cucumber (if using) over the egg, then add the sauce and cheese if using.
- 7Close with the top half of the bagel, press down gently to hold it together like a burger, and enjoy warm.
