Apple Brownies

No flour, no sugar — just oats, apple, egg and honey baked into soft, fudgy squares. Batch-bake a tray and keep in the fridge for three days.

Ingredients

  • 1 apple (~150 g), peeled and grated
  • 100 g rolled oats
  • 2 eggs
  • 1 tbsp honey
  • 1 tsp cinnamon
  • Pinch of salt

Method

  1. 1Preheat oven to 180 °C. Line a small baking tin (approx 20 cm square) with baking paper.
  2. 2Grate the apple directly into a bowl — no need to peel.
  3. 3Add oats, eggs, honey, cinnamon and a pinch of salt. Mix well.
  4. 4Pour into the prepared tin and smooth the top.
  5. 5Bake 20–22 min until set and lightly golden on top.
  6. 6Cool in the tin, then cut into squares. Store in the fridge up to 3 days.
