Tofu & Hummus Sandwich
Crispy cornstarch-fried tofu with hummus and lettuce on sourdough. A plant-based, high-protein sandwich that pairs well with a bowl of soup.

Ingredients
- 100 g firm tofu, pressed and sliced into strips
- 1 tbsp cornstarch
- 1 tsp sesame oil
- 1 tsp olive oil
- 2 slices sourdough bread
- 40 g hummus
- Handful of lettuce
Method
- 1Press the tofu to remove excess moisture, then slice into strips.
- 2Coat the tofu strips in cornstarch, shaking off the excess.
- 3Heat the sesame and olive oil in a pan over medium-high heat.
- 4Fry the tofu 3–4 minutes per side until golden and crisp. Season.
- 5Spread hummus on the sourdough, then layer the tofu and lettuce on top. Serve alongside the soup.
