
Sandwich with Shrimp in Salsa Rosa
Toasted wholemeal panini filled with quick salsa rosa prawns, thin red onion and rocket. Ready in 10 minutes.

Ingredients
- 150 g cooked, peeled prawns (frozen — boiled 2 min and drained)
- 1½ tbsp light mayonnaise
- 1 tsp ketchup
- Squeeze of lemon juice
- ¼ red onion, very thinly sliced
- 1 wholemeal or wholegrain ciabatta roll (or 2 slices sourdough/wholemeal bread)
- Handful of rocket
- Side salad, to serve (optional)
Method
- 1Boil the frozen prawns for 2 minutes, or follow the pack instructions, then drain well.
- 2Make a quick salsa rosa: stir together the mayo, ketchup and a squeeze of lemon juice.
- 3Toss the drained prawns and thinly sliced red onion through the salsa rosa.
- 4Split the ciabatta (or bread of choice) and toast lightly if you like.
- 5Fill with the prawn mixture and a handful of rocket. Serve with a side salad if you wish.
