Ingredients

  • ½ pack microwavable brown rice
  • ½ pack frozen cauliflower rice
  • 2 eggs
  • 2 egg whites
  • Salt, pepper, paprika
  • A little oil, for frying

Method

  1. 1Whisk the eggs and egg whites with a pinch of salt, pepper and paprika.
  2. 2Heat a little oil in a non-stick pan over medium heat. Add the brown rice and cauliflower rice, stir to warm through, 2–3 min.
  3. 3Pour the egg mixture over the rice, spreading it evenly. Cook 3–4 min until the base is set.
  4. 4Flip carefully (or slide onto a plate and flip back into the pan) and cook the other side 2–3 min until fully set.
  5. 5Slice into wedges and serve, with a green salad or a bowl of soup on the side if you like.
