Egg Frittata with Rice
A quick pan-fried frittata with brown rice and cauliflower rice. Can be accompanied by a green salad or a bowl of soup.

Ingredients
- ½ pack microwavable brown rice
- ½ pack frozen cauliflower rice
- 2 eggs
- 2 egg whites
- Salt, pepper, paprika
- A little oil, for frying
Method
- 1Whisk the eggs and egg whites with a pinch of salt, pepper and paprika.
- 2Heat a little oil in a non-stick pan over medium heat. Add the brown rice and cauliflower rice, stir to warm through, 2–3 min.
- 3Pour the egg mixture over the rice, spreading it evenly. Cook 3–4 min until the base is set.
- 4Flip carefully (or slide onto a plate and flip back into the pan) and cook the other side 2–3 min until fully set.
- 5Slice into wedges and serve, with a green salad or a bowl of soup on the side if you like.
