A clue from the longest-lived people on Earth
The Okinawan people of Japan have, for decades, had among the highest concentrations of centenarians on the planet. Researchers studying their traditional diet in the 1950s found something that would make most modern influencers uncomfortable: around 85% of their calories came from carbohydrates, primarily sweet potatoes, rice, and vegetables.
They were not obese. They were not diabetic. They were reaching 100 in extraordinary health.
The problem was never carbohydrates. The problem has always been which carbohydrates, how much, and in what context. This lesson clears up the confusion once and for all.
What carbohydrates actually do
Carbohydrates are your body’s primary and most efficient fuel source. They break down into glucose, which powers every cell, but especially the ones that cannot run on fat.
Your brain is the most glucose-hungry organ in your body. It cannot store energy, so it depends on a constant supply of blood glucose. The minimum required is approximately 130 g of glucose per day; without it, focus deteriorates, mood drops, and decision-making suffers. This is not a choice; it is physiology.
Muscles store glucose as glycogen. High-intensity exercise (gym sessions, interval runs, team sports) runs almost entirely on glycogen. Low-carb athletes performing at these intensities hit a wall, literally. Long aerobic work can use fat, but anything above 60% effort needs glycogen.
Carbohydrates stimulate the uptake of tryptophan into the brain, which is converted to serotonin: the neurotransmitter most associated with calm, satisfaction and sleep quality. This is why drastically restricting carbs often causes irritability, anxiety, and cravings. Binge-restrict cycles frequently start with excessive carb cutting.
Fibrous carbohydrates (vegetables, legumes, wholegrains, fruit) feed your gut microbiome; the 38 trillion bacteria that regulate immunity, inflammation, vitamin synthesis and metabolic health. A fibre-poor diet impoverishes this ecosystem within days.
The real distinction: whole vs refined
All carbohydrates end up as glucose. The critical difference is how fast and with what nutritional baggage they arrive.

White rice is not the enemy
Okinawans ate white rice. The Japanese still do. The difference is portion context and what surrounds the carb (vegetables, fish, miso) versus the butter, processed meat and sauces typical of a Western meal. A carb is rarely a problem in isolation; it is usually the company it keeps and the overall calorie context.
How many carbs do you need?
Carbohydrate needs scale directly with activity. More movement = more glycogen depletion = higher carb requirement for recovery and performance. The right amount for you depends on your TDEE and how much you exercise.

What actually happens when you cut carbs too low

Practical upgrades this week
Swap, don’t ban
Replace white bread with wholegrain sourdough; white pasta with high-protein pasta or buckwheat; morning cereal with oats. You keep the convenience, gain the fibre.
Build carbs around workouts
Eat your largest carb portions around training: the meal before for fuel, and the meal after for recovery. Your body absorbs them with highest efficiency at these times.
Use vegetables for volume
Non-starchy vegetables (broccoli, courgette, salad leaves, cucumber) are almost entirely carbohydrate, but so low in calories you can eat unlimited amounts. They add bulk, fibre, and micronutrients for almost zero calorie cost.
Fruit is not sugar
Whole fruit comes packaged with fibre, water, vitamins and polyphenols. The fibre dramatically slows glucose absorption. An apple is not the same as apple juice. Enjoy 2-3 portions of whole fruit daily without concern.
Release the fear, keep the awareness
Carbs are not your enemy. Uncontrolled portions, poor quality choices, and a lack of awareness around food in general are the real culprits behind most weight gain, and none of those problems are solved by cutting carbs.
